Chocolate Peanut Butter Sandwich Cookies


Looking to add a last-minute treat to your Christmas cookie platter that your family will LOVE?  Here’s a delicious yet easy favorite in our family we look forward to every year; but you better get in there quickly because they go fast!  My mother-in-law brings them on Thanksgiving, signaling the official start to our family Christmas season.  The kids love them, regardless their age, and the adults are lucky to get any by the time Thanksgiving dinner is over.  With minimal equipment and supplies, and only 3 ingredients, putting them together is a breeze.


  • 1 box Ritz crackers (or something similar) – original, not flavored
  • 1 jar JIF Creamy Peanut Butter (or your favorite creamy peanut butter)
  • 1 ½ packages (Chocolate Almond Bark or candy coating

Equipment / Supplies

  • Double-boiler
  • Knife or spreader
  • Wax paper
  • Tongs
  • Baking sheets

Step 1: Make “sandwiches” by spreading the peanut butter on one cracker and top with another. Place each “sandwich” on a wax paper lined baking sheet. We use 4 sleeves of crackers.

Step 2: In the double boiler, melt the chocolate almond bark or candy coating until smooth, stirring frequently. We used 1 ½ packages to cover 4 sleeves of crackers.

Step 3: Using the tongs, dip the “sandwiches”, one at a time, in the melted almond bark, flipping as needed until coated on all sides.

Step 4: Place the coated “sandwich” back on wax paper lined baking sheets and allow to cool. The almond bark (or candy coating) will harden as it cools.

Once the coating has cooled and hardened, they are ready to serve!
